Gluten Free Easy French Toast Muffin

French toast is a dish that has been around in some variation since the 4th or 5th Century. The French name for this meal is pain perdu (“lost bread”) and it aptly describes the purpose of the recipe—to reclaim or use stale bread that would otherwise be lost or wasted.

All French toast recipes call for soaking slices of bread in a mixture of beaten eggs with milk or cream. Sometimes sugar, honey, cinnamon, nutmeg or vanilla are added to the custard mixture. The bread is fried after soaking the bread slices in the liquid mixture.

Sandi Gaertner, a gluten-free blogger and founder of FearlessDining.com, gives us a gluten-free French bread recipe that is baked instead of fried.  I’m like Sandi’s kids and don’t eat the ends of bread loaves, but I’m going to use her idea of freezing the ends until I have enough for a batch of these yummy muffins. This idea is certainly in line with the pain perdu concept.

Another alteration in Sandi’s recipe is the use of coconut milk instead of dairy milk and cardamom in the custard mix. I would not have thought to use cardamom; I certainly would reach for nutmeg. But this little twist would make a nice variation.

Other Tips to Making Good French Bread

Here are a few more tips to making your next batch of French toast outstanding.

  • The key to French toast is stale bread because it will soak up more egg mixture without falling apart. If you don’t have stale bread, make your day-old bread by leaving slices on your counter for at least 8 hours.
  • You can prepare the custard mixture the night before to allow the flavors (vanilla and spices) to combine.
  • Let your bread stand in the custard mixture to allow the custard to permeate. A good soaking will create a deliciously soft texture.
