Here’s a lentil soup recipe that is packed with Italian tastiness and is full of veggies and protein. Some of the ingredients are potatoes, spinach, zuchinni, oregano and basil. The protein comes from the lentils, of course, and Italian sausage. I’m thinking you can make this vegetarian by not using the sausage and using vegetable broth instead of chicken broth.
