Tasty Tuscan Lentil Soup [Recipe]

Lentil soup has a long history dating back to 9,500 to 13,000 years. Lentil soup is even mentioned in the Bible: “Then Jacob gave Esau bread and pottage of lentils.” (Gen: 25:34)

This small humble legume is high in nutritional value and is available throughout the year. Lentils are relatively quick and easy to prepare. They readily absorb a variety of wonderful flavors from other foods and seasonings.

Here’s a lentil soup recipe packed with Italian tastiness and full of veggies and protein. Some of the ingredients are potatoes, spinach, zucchini, oregano, and basil. The protein comes from the lentils, of course, and Italian sausage. I think you can make this vegetarian by not using sausage and vegetable broth instead of chicken broth.
