How about freshly-baked zucchini bread?

Here’s a zucchini bread recipe from Emma Christensen at TheKitchn.com that will give you a moist, flavorful, easy-to-slice quick bread. Since it’s a quick bread (a bread recipe that doesn’t use yeast), remember not to stir too much, so try to mix all the ingredients together. Stirring too much may cause the bread to sink in the middle.

Zucchini has lots of water in it. Let it rest for 5-10 minutes, and the water will begin to accumulate in the bowl. Emma instructs us to squeeze as much water out as possible.

A sweet zucchini bread is a delicious way to enjoy this favorite fall squash.
