In a medium-sized bowl, whisk together the egg yolks and granulated sugar until the mixture thickens and becomes smooth.
In a medium saucepan, mix the milk, whipping cream, cinnamon sticks, and salt.
Heat the saucepan over medium-high heat. Just before boiling, turn off the heat. Let it cool for 5 minutes.
Gradually add the hot milk to the egg mixture, one tablespoon at a time, whisking continuously. This process is known as tempering and prevents the eggs from curdling.
Once the milk is fully incorporated into the eggs, pour the mixture back into the saucepan. Add the ½ teaspoon of vanilla extract at this point and mix well.
Heat the mixture over medium heat until it reaches 160°F. Then, remove from heat and let it cool completely
Strain the eggnog through a fine-mesh sieve into a bottle or pitcher to ensure asmooth texture.
Refrigerate the eggnoguntil chilled. This allows the flavors to meld and develop.
